Panna Cotta with Caramelized Apples

Panna Cotta

1/3 cup milk (skim or whole)
1 packet unflavored gelatin (.25 oz.)
2 cups heavy cream
1 cup whole milk
1/2 cup sugar
1 1/2 teaspoons vanilla

Stir 1/3 cup milk and gelatin together in a small bowl. Set aside.

Heat sugar, cream, and milk to a full boil on medium heat, stirring constantly.  Stir in milk and gelatin mixture and boil for one more minute. Remove from heat and add vanilla.

Pour into 3 - 4 ramekins.  Cool completely on counter top. Then cover with plastic wrap and refrigerate, preferably overnight.

Caramelized Apples

Peel and core two apples. Slice thinly. Melt 3 Tablespoons butter over medium heat in a small skillet and add apples. Drizzle with 2 tablespoons brown sugar, maple syrup or honey (adjust to desired sweetness). Stir frequently, reducing heat if necessary, until apples are soft and golden. Garnish ramekins with apples just before serving.

Note:  Dessert may be served in ramekins or if you'd like to serve it on a dessert plate, place bottom of ramekin in a bowl of warm - hot water for a minute or so.  Loosen edges with sharp knife and invert onto a dessert plate. Garnish with apples and serve immediately.
