Baked Oatmeal with Roasted Blueberries
(Serves 4-6)
3 cups Old Fashioned Oats
1/2 cup brown sugar
1/2 cup maple syrup
1/2 cup oil
1 cup milk
3 eggs, slightly beaten
1 1/2 teaspoons vanilla
1/2 teaspoon cinnamon
2 teaspoons baking powder
A pinch of salt
Process
Preheat oven to 350 degrees.
In a medium-sized mixing bowl, stir together oats, sugar, cinnamon, baking powder and salt. Then add eggs, maple syrup, oil, milk and vanilla. Mix together with a spoon until blended. Pour into a buttered baking pan, either an 8" x 8" square or a 9" round.
Bake for 30 minutes. Serve warm.
Blueberry Topping (inspired by Deborah)
Toss two handfuls of blueberries into a bowl and wash. Then add 2 tablespoons brown sugar and stir gently to coat. Pour into a baking pan and roast in the oven at 400 degrees for 10 minutes.
To serve:
Scoop into a bowl and top with Greek yogurt and blueberry topping.
Optional: I often bake this oatmeal adding 1 cup of whatever seasonal fruit is available, such as peaches, apples, blueberries, etc.
